Fettucine alfredo is my favorite pasta dish, but it’s loaded with calories and fat because it’s a cream and butter-based sauce that is mostly cream and butter. It’s delicious, but fattening. And unfortunately because of how rich and creamy it is, I can never just have a few bites. I was on Lindsay’s site this morning and saw a creative recipe for a healthy version of fettucine alfredo made with cauliflower sauce. At first it seemed hard to believe that it would even be comparable, but Lindsay said it tastes delicious and still has the same consistency as a typical alfredo sauce… just without all the calories.
